- 3 red onions, coarsely chopped
- 3 cloves garlic, peeled and finely chopped
- 2 tbsp butter or ghee
- 1 tbsp coriander powder
- 1 tbsp ground cumin
- 600g tin of spinach puree
- Fry the onion with the garlic and butter/ghee on a medium heat.
- When the onion starts to soften add the coriander, cumin and spinach puree.
- Bring to a simmer and cook for 5 minutes.
- Serve with rice.
