
This is a vegetarian version of cock-a-leeky soup, without the chicken.
Ingredients:
- 3 large leeks, thinly sliced
- 2 large onions, finely chopped
- 35g butter
- 750ml vegetable stock
- 250ml milk
Method:
- Place the leeks in a steamer and steam for 10 minutes. Keep the water from the steamer to add to the soup.
- Fry the onions in the butter until soft.
- Add the cooked leeks, steamer water, stock and milk to the onions and bring to the boil.
- Serve while still piping hot.
Serves 8 as a starter.
