The addition of tarragon to this gives it an unusual flavour which goes well with chicken dishes.
Serves 4.
Ingredients:
- 1kg of waxy potatoes, peeled and cut into 2cm pieces
- 10g fresh tarragon, finely chopped
- 30ml milk
- 50g butter
- salt and pepper to taste
Method:
- Boil the potatoes in a pan of water for 20 minutes.
- Drain the potatoes and return to the same pan.
- Add the remaining ingredients and mash until smooth.
- Serve immediately, but if you need to keep it around for a few minutes then return the lid to the pan.
Serves 4.
