The use of a thermometer here is essential to get the pork cooked just right. I really like my Meater Bluetooth thermometer.
Ingredients:
- 1.5kg pork loin joint with skin
- 2 tsp kosher salt
- 1 tsp baking soda
- 1 tsp sunflower oil
Method:
- Score the pork loin skin with the sharpest knife you can find (or a craft knife)
- Mix the salt and baking soda together and then sprinkle liberally on the pork and rub into the skin
- Place uncovered in the fridge for at least an hour
- Heat the oven to 230 degrees
- Remove the pork from the fridge, wash off the salt and baking soda and then thoroughly dry the top with kitchen towel
- Lightly brush both the top and bottom of the join with sunflower oil
- Place in the oven on a raised rack in a roasting tin
- Roast for 30 minutes and then turn the oven down to 160 degrees
- Roast for another hour or so, until the pork reaches 60 degrees inside
- Remove from the oven, cover with foil and let rest for 15 minutes
- Serve with Yorkshire puddings, roast potatoes and apple sauce
