This is an easy side dish to do, and especially good if you've not let the tomatoes get up to room temperature soon enough to use!
Serves 2, but can easily multiply up to more if your frying pan is big enough.
Ingredients:
- 1 tsp olive oil
- 1 clove garlic, peeled and finely minced
- 16 cherry tomatoes, washing and dried
Method:
- Heat the oil in a small to medium sized frying pan over a medium-high heat.
- Once the oil is hot, drop in the minced garlic and stir it about for a minute.
- Add the tomatoes and cook, stirring frequently, for a couple of minutes.
- Take the pan off the heat after a couple of minutes and then serve on the side of some rich and creamy dish.
