This is sort of based on a recipe from Serious Eats but works around the lack of range of chilli peppers or tomatillos in the UK by making an almost not entirely different dish!
Ingredients:
- 6 vine tomatoes, cut into eigths
- 2 red chillis, seeds and white flesh removed and finely chopped (use four if you like food with some spice)
- 1 onion, peeled and finely chopped
- 4 cloves of garlic, peeled and finely chopped
- 1600g boned pork shoulder, cut into 2 inch slices
- 2 tsp fish sauce
- 2 tsp toasted (or cooked in the microwave for 2 minutes) cumin seeds
- 1 tbsp lime juice
- a good pinch of salt
- a good sized bunch of fresh coriander, finely chopped
Method:
- Add all the ingredients apart from the fresh coriander to a pressure cooker, with the tomatoes first.
- Put the lid on and cook at high pressure for 30 minutes.
- Release the pressure and wait for the pressure cooker to be ready to be opened.
- Remove the slices/chunks of meat from the pressure cooker and place to one side.
- Use a stick blender or food processor to make a smooth paste from the remaining ingredients in the pressure cooker.
- Re-add the pork chunks to the smooth sauce.
- Serve with rice and with the fresh coriander as a garnish.
