Pressure cooker tomato sauce

This is an easy way to get a wonderfully rich tomato sauce with very little active effort.

Ingredients:

  • 2 onions, finely chopped
  • 4 cloves garlic, peeled and thinly sliced
  • 2 tbsp olive oil
  • 2 tins chopped tomatoes
  • 100g tomato puree

Method:

  1. Place the onion, garlic and oil in your pressure cooker and put on saute mode (if electric, otherwise fry over a medium heat).
  2. When the onions and garlic are softened from the heat, probably a couple of minutes, add the rest of the ingredients and put the lid on the pressure cooker.
  3. Cook at high pressure for 45 minutes.
  4. Once the cooker has finshed, let it depressurise naturally.
  5. Use as the basis for a flavour rich sauce with pasta. Can be frozen and then reheated if there aren't enough people to feed in one go.
Produces enough red sauce to serve 8 people with pasta.
