This is an easy way to get a wonderfully rich tomato sauce with very little active effort.
Ingredients:
- 2 onions, finely chopped
- 4 cloves garlic, peeled and thinly sliced
- 2 tbsp olive oil
- 2 tins chopped tomatoes
- 100g tomato puree
Method:
- Place the onion, garlic and oil in your pressure cooker and put on saute mode (if electric, otherwise fry over a medium heat).
- When the onions and garlic are softened from the heat, probably a couple of minutes, add the rest of the ingredients and put the lid on the pressure cooker.
- Cook at high pressure for 45 minutes.
- Once the cooker has finshed, let it depressurise naturally.
- Use as the basis for a flavour rich sauce with pasta. Can be frozen and then reheated if there aren't enough people to feed in one go.
