Pressure Cooker Sausage Casserole

This is a simple way of making a casserole with a rich sauce.

Ingredients

  • 4 onions, peeled, halved and thinly sliced
  • 2 tbsp olive oil
  • 10 sausages
  • 500g of diced pork shoulder
  • 100g tomato puree
  • 1 tsp garlic powder
  • 1 tsp herbs de provence
  • 250ml full bodied red wine
  • 1 tsp fish sauce
  • a pinch of salt

Method

  1. Put the onions and 1 tbsp of olive oil in the pressure cooker and put on saute mode and cook until soft.
  2. While the onions cook, use a cast iron pan and put the remaining oil in it and heat on a high heat.
  3. Sear the sausages and pork shoulder in the pan, just until they start to brown.
  4. Put the sausages, pork shoulder and all the other ingredients into the pressure cooker.
  5. Mix well and then put the lid on the pressure cooker.
  6. Cook on high for 25 minutes.
  7. Release the pressure and serve with mashed potato and peas.

Serves five.
