This is a simple way of making a casserole with a rich sauce.
Serves five.

Ingredients
- 4 onions, peeled, halved and thinly sliced
- 2 tbsp olive oil
- 10 sausages
- 500g of diced pork shoulder
- 100g tomato puree
- 1 tsp garlic powder
- 1 tsp herbs de provence
- 250ml full bodied red wine
- 1 tsp fish sauce
- a pinch of salt

Method
- Put the onions and 1 tbsp of olive oil in the pressure cooker and put on saute mode and cook until soft.
- While the onions cook, use a cast iron pan and put the remaining oil in it and heat on a high heat.
- Sear the sausages and pork shoulder in the pan, just until they start to brown.
- Put the sausages, pork shoulder and all the other ingredients into the pressure cooker.
- Mix well and then put the lid on the pressure cooker.
- Cook on high for 25 minutes.
- Release the pressure and serve with mashed potato and peas.
