Nepalese Pressure Cooker Dahl

This is an attempt to re-create the flavours from a memorable holiday in Nepal, hiking in the mountains.

  • 1 onion, finely chopped
  • 2 tbsp sunflower oil
  • 2 tsp turmeric
  • 2 tsp ginger powder
  • 2 tsp ground coriander
  • 1 tsp garlic powder
  • 1 vegetarian stock cube
  • 1/2 tsp dried chilli flakes or cayenne pepper
  • 250ml of dried red lentils
  • 750ml of fresh water

Method:

  1. Put your pressure cooker on the saute setting.
  2. Fry the onion in the sunflower oil until it has gone soft.
  3. Add the turmeric, ginger, coriander and garlic to the onion and stir well.
  4. Fry for a couple more minutes.
  5. Add all the remaining ingredients to the pressure cooker.
  6. Put the lid on and cook on high for 10 minutes.
  7. Once the initial 10 minutes is up, leave for a further 10 minutes before releasing the pressure.
