This is an attempt to re-create the flavours from a memorable holiday in Nepal, hiking in the mountains.
Serves 4.

Ingredients:
- 1 onion, finely chopped
- 2 tbsp sunflower oil
- 2 tsp turmeric
- 2 tsp ginger powder
- 2 tsp ground coriander
- 1 tsp garlic powder
- 1 vegetarian stock cube
- 1/2 tsp dried chilli flakes or cayenne pepper
- 250ml of dried red lentils
- 750ml of fresh water
Method:
- Put your pressure cooker on the saute setting.
- Fry the onion in the sunflower oil until it has gone soft.
- Add the turmeric, ginger, coriander and garlic to the onion and stir well.
- Fry for a couple more minutes.
- Add all the remaining ingredients to the pressure cooker.
- Put the lid on and cook on high for 10 minutes.
- Once the initial 10 minutes is up, leave for a further 10 minutes before releasing the pressure.
- Serve as an accompaniment for a curry, or just on its own with rice.
