Simple Aligot (Cheesy Mashed Potato)

This is a simple take on aligot, which is basically just cheesy mashed potato.

Ingredients:

  • 200g potatoes, peeled and cut into 2cm cubes
  • 180g comtĂ© or gruyere cheese, coaresly grated
  • 30ml milk
  • 2 cloves of garlic, crushed in a press or finely chopped
  • salt and pepper to taste

Method:

  1. Put the potatoes into a pan of water and bring to the boil.
  2. Simmer until the potatoes are soft, about 12 minutes.
  3. Drain the potatoes using a colander, and return to the same pan they cooked in (but not on the heat).
  4. Quickly add the cheese, milk, garlic and a pinch of salt and pepper.
  5. Give the mixture a quick stir with a spoon and then use a potato masher to mash everything together.
  6. When smoothly mashed, serve immediately (it'll go solid if it gets too cold) with some grilled meat or sausages and some fresh tangy vegetables (pickled vegetables or tomatoes work well).

Serves 3 as a side dish (it's quite rich).
