Pitta Bread

These are an easy to make dough that requires about and hour and a half of rising time.

Ingredients:

  • 7g satchet of instant dried yeast
  • 500g strong white bread flour
  • 300ml luke-warm water
  • 2 tsp salt
  • 2 tbsp olive oil

Method:

  1. Put all the ingredients in a stand mixer (make sure the yeast goes in first so that it doesn't risk touching undiluted salt, that'll kill it).
  2. Mix with a kneeding hook on low speed for 5 minutes.
  3. Cover with a tea towel and leave the mixing bowl to one side for an hour.
  4. Pre-heat the oven to 250 degrees Celsius with a pizza stone in it if you have one.
  5. Tip the dough out onto a floured surface and divide into 8 balls.
  6. Roll each ball out into a disk about 4mm thick.
  7. Bake in the oven for 4 or 5 minutes (you'll probably need to do it in a couple of batches). When they're nicely puffed up and just starting to brown then take them out of the oven.
  8. Wrap in a clean tea towel to keep warm until you want to eat them.

Makes enough for 8 pitta bread, and they'll keep for a couple of days in an air tight bag, warming them in a toaster before eating them.
