Pressure Cooker Chickpeas

This is a simple way of cooking chickpeas that doesn't need any overnight soaking.

Ingredients:

  • 250g dried chickpeas
  • enough fresh cold water to cover the chickpeas by a couple of cm

Method:

  1. Put the chickpeas in your electric pressure cooker, covering with the water.
  2. Cook on high for 22 minutes.
  3. Allow to reduce pressure naturally.
  4. All in all this means it takes about an hour from starting to the chickpeas being done.

Makes enough for about 6 people's worth of hummus.
