Banana Bread

Ingredients

  • 140g butter at room temperature
  • 140g caster sugar
  • 2 large eggs, beaten roughly together
  • 140g plain flour
  • 2 ripe bananas
  • 1 tsp baking powder

Method

  1. Pre-heat the oven to 160 degrees Celsius (or 180 degrees if it's not a fan oven).
  2. Line a 1lb loaf tin with greaseproof paper.
  3. Put the butter and sugar into a mixing bowl and mix until well combined (if using a stand mixer you'll want to use a medium speed).
  4. Run the mixer and add the egg mixture and continue to mix until it is all combined.
  5. Next add the flour and mix again.
  6. In a separate bowl, mash the banana and baking powder together with a fork until it's nice and mushy.
  7. Add the mushy banana mixture to the cake batter and fold together.
  8. Pour the cake mixture into the loaf tin and put into the oven.
  9. Bake for 30 to 35 minutes, testing it's done by inserting a skewer and it comes out clean with no mixture stuck to it.
  10. Leave to cook on the side and then slice and serve.
Makes a 1lb loaf of banana bread.
