
Ingredients
- 140g butter at room temperature
- 140g caster sugar
- 2 large eggs, beaten roughly together
- 140g plain flour
- 2 ripe bananas
- 1 tsp baking powder

Method
- Pre-heat the oven to 160 degrees Celsius (or 180 degrees if it's not a fan oven).
- Line a 1lb loaf tin with greaseproof paper.
- Put the butter and sugar into a mixing bowl and mix until well combined (if using a stand mixer you'll want to use a medium speed).
- Run the mixer and add the egg mixture and continue to mix until it is all combined.
- Next add the flour and mix again.
- In a separate bowl, mash the banana and baking powder together with a fork until it's nice and mushy.
- Add the mushy banana mixture to the cake batter and fold together.
- Pour the cake mixture into the loaf tin and put into the oven.
- Bake for 30 to 35 minutes, testing it's done by inserting a skewer and it comes out clean with no mixture stuck to it.
- Leave to cook on the side and then slice and serve.
