This is an easy but tasty thing to do on the barbecue with chicken thighs, great served in a freshly made flatbread.
Serves 2, but easily multiplies up to more.

Ingredients
- 1 garlic clove, crushed
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp of whole cardamon pods
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 2 tsp lemon juice
- 2 tsp olive oil
- 4 chicken thighs, boneless and skinless

Method
- Mix all the ingredients other than the chicken together in a bowl until they are a smooth paste.
- Add the chicken thighs to the bowl and stir until well coated in the marinade.
- Put in a fridge to marinade overnight.
- Heat your barbecue on medium-high.
- When the barbecue is hot, put the thighs on it and cook for 5 minutes.
- Flip the chicken and cook the other side for 4 minutes.
- Remove the browned chicken from the barbecue and put on a plate and cover with foil.
- Leave to rest for at least 5 minutes.
- Slide the chicken thinly and then transfer to a bowl.
- Serve with sauce, fresh lettice and tomatoes in a flatbread to make a wrap.
