Chicken Shawarma

This is an easy but tasty thing to do on the barbecue with chicken thighs, great served in a freshly made flatbread.

Ingredients

  • 1 garlic clove, crushed
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp of whole cardamon pods
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 2 tsp lemon juice
  • 2 tsp olive oil
  • 4 chicken thighs, boneless and skinless

Method

  1. Mix all the ingredients other than the chicken together in a bowl until they are a smooth paste.
  2. Add the chicken thighs to the bowl and stir until well coated in the marinade.
  3. Put in a fridge to marinade overnight.
  4. Heat your barbecue on medium-high.
  5. When the barbecue is hot, put the thighs on it and cook for 5 minutes.
  6. Flip the chicken and cook the other side for 4 minutes.
  7. Remove the browned chicken from the barbecue and put on a plate and cover with foil.
  8. Leave to rest for at least 5 minutes.
  9. Slide the chicken thinly and then transfer to a bowl.
  10. Serve with sauce, fresh lettice and tomatoes in a flatbread to make a wrap.
Serves 2, but easily multiplies up to more.
