Rollable Flatbreads

This gives a nice soft flatbread that's easy to use to wrap around some barbecue meat.

Ingredients

  • 50g butter, cut into small cubes
  • 175ml milk
  • 300g plain flour
  • 1/2 tsp salt
  • 2 tsp of sunflower oil

Method

  1. Put the butter and milk in a microwave proof dish and heat on full power for 90 seconds.
  2. Combine the flour, salt and warm milk/butter in a mixing bowl.
  3. Kneed to form a soft dough for 2 minutes (if you've got a stand mixer then just turn it on low for 2 minutes with a dough hook in it).
  4. Cover the dough with clingfilm and leave to rest in a corner for at least 30 minutes to make it easier to roll out.
  5. Divide into quarters and use a rolling pin to roll out each quarter into a 9 inch (22 cm) circles.
  6. Heat a frying pan on medium heat and add half a tsp of sunflower oil and then place one of the dough disks in it.
  7. Cook for 90 seconds (or until it starts to brown) and then flip.
  8. Cook the other side for about 60 seconds.
  9. Remove from the pan, put on a plate and cover with a clean tea towel to keep warm.
  10. Repeat for the other 3 flatbreads.
  11. Serve while still warm.

Makes 4 flatbreads, enough for 2 people.
