This gives a nice soft flatbread that's easy to use to wrap around some barbecue meat.
Makes 4 flatbreads, enough for 2 people.
Ingredients
- 50g butter, cut into small cubes
- 175ml milk
- 300g plain flour
- 1/2 tsp salt
- 2 tsp of sunflower oil
Method
- Put the butter and milk in a microwave proof dish and heat on full power for 90 seconds.
- Combine the flour, salt and warm milk/butter in a mixing bowl.
- Kneed to form a soft dough for 2 minutes (if you've got a stand mixer then just turn it on low for 2 minutes with a dough hook in it).
- Cover the dough with clingfilm and leave to rest in a corner for at least 30 minutes to make it easier to roll out.
- Divide into quarters and use a rolling pin to roll out each quarter into a 9 inch (22 cm) circles.
- Heat a frying pan on medium heat and add half a tsp of sunflower oil and then place one of the dough disks in it.
- Cook for 90 seconds (or until it starts to brown) and then flip.
- Cook the other side for about 60 seconds.
- Remove from the pan, put on a plate and cover with a clean tea towel to keep warm.
- Repeat for the other 3 flatbreads.
- Serve while still warm.
