This is a simple sauce that is great drizzled over spicy middle eastern food, such as chicken shawarma or even just a char grilled vegetable such as courgettes.
Makes enough for a dressing/flatbread topping for four people.

Ingredients
- 2 cloves of garlic, peeled and roughly chopped
- 2 tbsp lemon juice
- 3 tbsp tahini
- 1/2 tsp ground cumin
- a generous pinch of salt
- 6 tbsp cold water

Method
- Place all ingredients in a blender and blend until smooth. If it starts to look too stiff then add another tablespoon or two of cold water.
- Cover and chill in a fridge before serving.
