Tahini Sauce

This is a simple sauce that is great drizzled over spicy middle eastern food, such as chicken shawarma or even just a char grilled vegetable such as courgettes.

Ingredients

  • 2 cloves of garlic, peeled and roughly chopped
  • 2 tbsp lemon juice
  • 3 tbsp tahini
  • 1/2 tsp ground cumin
  • a generous pinch of salt
  • 6 tbsp cold water

Method

  1. Place all ingredients in a blender and blend until smooth. If it starts to look too stiff then add another tablespoon or two of cold water.
  2. Cover and chill in a fridge before serving.

Makes enough for a dressing/flatbread topping for four people.
