Courgette Fritters

This is a simple dish that's a great use for a summer glut of courgettes.

Ingredients

  • 750g courgettes, washed, ends removed and coarsly grated
  • 2 eggs
  • 70g plain flour
  • 75g grated grana padana
  • 3 tbsp sunflower oil

Ingredients

  1. Mix the courgettes, eggs, flour and cheese in a large mixing bowl until well combined.
  2. Heat 1 tbsp of the oil in a large frying pan over a medium heat.
  3. Once the oil is hot enough to be slightly shimmering, spoon a tbsp of the fritter mixture into the pan. You should be able to fit 4 fritters into a large frying pan.
  4. Cook for 3 minutes.
  5. Flip the fritters with a spachelor and press down gently on the cooked top to flatten the other side.
  6. Cook the other side for 3 more minutes.
  7. Remove from the pan and leave to cool on a paper towel while you cook the rest of the fritters using the remaining oil.
  8. Enjoy with a creamy dip and some crusty bread.
Makes about 12 fritters, enough for 4 people.
