This is a simple dish that's a great use for a summer glut of courgettes.
Ingredients
- 750g courgettes, washed, ends removed and coarsly grated
- 2 eggs
- 70g plain flour
- 75g grated grana padana
- 3 tbsp sunflower oil
Ingredients
- Mix the courgettes, eggs, flour and cheese in a large mixing bowl until well combined.
- Heat 1 tbsp of the oil in a large frying pan over a medium heat.
- Once the oil is hot enough to be slightly shimmering, spoon a tbsp of the fritter mixture into the pan. You should be able to fit 4 fritters into a large frying pan.
- Cook for 3 minutes.
- Flip the fritters with a spachelor and press down gently on the cooked top to flatten the other side.
- Cook the other side for 3 more minutes.
- Remove from the pan and leave to cool on a paper towel while you cook the rest of the fritters using the remaining oil.
- Enjoy with a creamy dip and some crusty bread.
