Crispy Air Fryer Potato Wedges

The secret ingredient here is the bicarbonate of soda that helps to break down the outside layer of the potato, allowing it to crisp up nicely in the air fryer.

Ingredients

  • 600g potatoes, washed and cut into wedges (either 8ths or 6ths, depending on if they are large or not)
  • 1 tsp bicarbonate of soda (not baking powder)
  • 1 tbsp olive oil

Method

  1. Fill your kettle with water and turn it on.
  2. Put the potatoes into a large bowl and cover with cold water and give a good swirl around.
  3. Drain off the cold water and then sprinkle the bicarbonate of soda into the bowl.
  4. Pour the boiling water from the kettle over the potato wedges in the bowl and leave for 15 minutes.
  5. Turn your air fryer on to pre-heat at 205 degrees Celsius.
  6. After the 15 minutes, drain off the water (be careful as it'll still probably be too hot to handle directly) and return the potatoes to the empty bowl.
  7. Drizzle the olive oil over the potato wedges and toss to evenly coat them all.
  8. Put the potato wedges onto the tray in your air fryer and bake for 30 minutes, giving the basket a good shake every 10 minutes to make sure they cook evenly.
  9. Serve with ketchup and enjoy.
