Toddler Friendly Chicken Curry

When I came up with a curry that my 3 year old son ate, so I just had to document/record it here.

Ingredients

  • 1 white onion, peeled and cut into 1cm pieces
  • 2 tsp mild curry powder
  • 1 tbps sunflower oil
  • 1 tsp smoked paprika
  • 300ml coconut milk, or 300ml water and 50g coconut milk powder
  • 4 tbsp red split lentis
  • 200g pre-cooked chicken breast or thigh (or raw, see step 2)

Method

  1. Put the onion, curry powder, oil and paprika into a blender and blend until smooth,
  2. Add to the onion and spice mix to pan over a hob on medium heat. If using raw chicken, add it to the pan now.
  3. Let the onion puree cook until it starts to brown before stiring and adding the coconut milk and water and lentils.
  4. Simmer over a low heat for 20 minutes.
  5. Add the pre-cooked shredded chicken.
  6. Mix well and serve with rice and other pre-made curry sundries.
Serves 4.
