Air Fryer Carrot Pakora

This is a simple way to use up some vegetables and make a tasty crispy side dish for a curry night that can be prepared ahead of time.

Ingredients

  • 5 carrots, coursley grated
  • 2 small potatoes, coursley grated
  • 1 tsp baking powder
  • 1 tsp turmeric powder
  • 1 tsp mild chilli powder
  • 2 tsp ground cumin
  • 100g gram flour
  • salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp cold water

Method

  1. Mix the grated carrot, potatoe, baking powder, turmeric, chilli and cumin together in a large bowl.
  2. Add the flour, salt and pepper to taste, and stir well.
  3. Sprinkle the water and olive oil over the mixture and mix well once more.
  4. When you're almost ready to eat, pre-heat the air fryer to 200 degrees Celsius.
  5. Put about a tbsp dollup of the mixture onto a baking tray in the air fryer and repeat until the mixture is all gone.
  6. Cook in the air fyer for 12 minutes, turning after about six minutes.
  7. Serve with a curry or other spicy meal.
Makes about 10 pakora, enough for 4 people.
