These are a quick and tasty way of jazzing up some potatoes with some leftover tomato sauce and/or alioli.
Ingredients
- 800g potatoes, cut into 1cm cubes, bad bits removed
- 2 tbsp olive oil
Method
- Cover the potatoes in cold water for at least 5 minutes.
- When you're about ready to cook, drain the potatoes and then wrap in a clean tea towel to dry off the cubes.
- Transfer back to a dry bowl and drizzle over the olive oil.
- Toss to coat in oil before transfering to a pan.
- Roast in an air fryer at 200 degrees for 20 minutes (or convection oven for 25 minutes) until golden brown, turning frequently.
- Serve with a smooth tomato sauce and garlic sauce (mayonnaise or alioli works great).
