This is a good use of beef shin to create a flavoursome curry in under an hour.
Ingredients
- 2 tbsp sunflower oil
- 1 tsp garam masala
- 1 tsp chilli powder
- 1 tsp ground cumin
- 1 tsp ground ginger
- 1/2 tsp ground all spice
- 2 onions, peeled and thinly sliced
- 500g beef shin, cubed
- 2 cloves of garlic, peeled and thinly sliced
- 400g tin of chopped tomatoes
- 1 beef stock cube
- 1 stick of cinnamon
- 1 red pepper, cut into thin strips
Method
- Heat the sunflower oil in the pressure cooker on saute mode (if electric) until shimmering.
- Add all the spices other than the whole cinnamon stick and the sliced onion.
- Stir until well coated and then every minute or so until the onion starts to soften, about 5 minutes.
- Add the beef cubes and stir fry for another couple of minutes.
- Dump in the chopped tomatoes, garlic, beef stock cube and cinnamon stick and give a good stir.
- Put the lid on the pressure cooker and bring up to high pressure and cook for 30 minutes.
- Let the pressure release naturally before opening.
- Finally add the slices of red pepper and simmer for a couple of minutes with the lid off.
