Pressure Cooker Beef Rogan Josh Curry

This is a good use of beef shin to create a flavoursome curry in under an hour.

Ingredients

  • 2 tbsp sunflower oil
  • 1 tsp garam masala
  • 1 tsp chilli powder
  • 1 tsp ground cumin
  • 1 tsp ground ginger
  • 1/2 tsp ground all spice
  • 2 onions, peeled and thinly sliced
  • 500g beef shin, cubed
  • 2 cloves of garlic, peeled and thinly sliced
  • 400g tin of chopped tomatoes
  • 1 beef stock cube
  • 1 stick of cinnamon
  • 1 red pepper, cut into thin strips

Method

  1. Heat the sunflower oil in the pressure cooker on saute mode (if electric) until shimmering.
  2. Add all the spices other than the whole cinnamon stick and the sliced onion.
  3. Stir until well coated and then every minute or so until the onion starts to soften, about 5 minutes.
  4. Add the beef cubes and stir fry for another couple of minutes.
  5. Dump in the chopped tomatoes, garlic, beef stock cube and cinnamon stick and give a good stir.
  6. Put the lid on the pressure cooker and bring up to high pressure and cook for 30 minutes.
  7. Let the pressure release naturally before opening.
  8. Finally add the slices of red pepper and simmer for a couple of minutes with the lid off.
Serves 4.
