I was trying to make smashed roast new potatoes, but didn't boil them long enough and used potatoes which were too waxy so they ended up shattering. They still ended up tasty and delightfully crisp.
Ingredients
- 700g of new salad potatoes, washed and any big ones cut in half to match smaller ones
- 2 tbsp olive oil
Method
- Put the potatoes in a saucepan and cover with cold water.
- Bring to the boil and then reduce the heat down to a simmer
- Simmer for 15 minutes.
- Drain and then use the bottom of a glass or the back of a spatchelor to flatten each one. Don't worry if they fall apart.
- Pre-heat the air fryer to 205 degrees Celsius.
- Drizzle the squashed potatoes with the olive oil and gently mix until well coated.
- Cook in the air fryer for 20 minutes, turning after 10 minutes.
