I realized I've never written down my recipe for perfect sunnyside-up eggs, so this post corrects that.
Ingredients
- 1 egg per person
- a couple of sprays of sunflower oil in an oil sprayer
Method
- Find a frying pan large enough to hold the number of eggs that you want to cook, and that you have a lid for the frying pan.
- Spray the pan with a coating of sunflower oil.
- Heat the pan over a medium heat.
- Once the oil starts to shimmer and move easily around the pan when you tilt it, careful crack the eggs into it.
- Immediately turn the heat down to low and place the lid over the frying pan.
- Cook for 3 minutes.
- Remove the lid and give the pan a jiggle to check that the egg white doesn't move but the yolk is still liquid.
- Turn off the heat and place the lid back onto the pan.
- While best served immediately, the eggs can sit like this for a few minutes if you're still getting the other bits of the meal ready.
- Use a teppanyaki spatula to carefully lift the egg out (it's easiest if you spray the spatchelor with oil first).
- Enjoy.
