Sunnyside-up Fried Eggs

I realized I've never written down my recipe for perfect sunnyside-up eggs, so this post corrects that.

Ingredients

  • 1 egg per person
  • a couple of sprays of sunflower oil in an oil sprayer

Method

  1. Find a frying pan large enough to hold the number of eggs that you want to cook, and that you have a lid for the frying pan.
  2. Spray the pan with a coating of sunflower oil.
  3. Heat the pan over a medium heat.
  4. Once the oil starts to shimmer and move easily around the pan when you tilt it, careful crack the eggs into it.
  5. Immediately turn the heat down to low and place the lid over the frying pan.
  6. Cook for 3 minutes.
  7. Remove the lid and give the pan a jiggle to check that the egg white doesn't move but the yolk is still liquid.
  8. Turn off the heat and place the lid back onto the pan.
  9. While best served immediately, the eggs can sit like this for a few minutes if you're still getting the other bits of the meal ready.
  10. Use a teppanyaki spatula to carefully lift the egg out (it's easiest if you spray the spatchelor with oil first).
  11. Enjoy.
Serves as many people as you have eggs.
