I've always hated making mashed potato as all the peeling and cubing and boiling seems to take forever. However SenpaiKai9000 demonstrated a neat trick to just use the microwave to cook them and end up with a superior texture. I was sceptical as I don't think microwaves make very good baked potatoes, but for mashed potato it's just perfect.
Ingredients
- 1 kg startchy potatoes, such as Maris Piper or King Edward
- 30g butter
- 50ml milk
Method
- Cut any bad bits out of the potatoes and spike all over the skin with the point of a knife.
- Place on a microwave safe plate and microwave on high power for 12 minutes.
- Test that the potatoes are cooked all the way through by checking the tip of a knife easily passes through the center.
- Heat the butter and milk in a saucepan over a low heat.
- Once the butter is melted, use a potato ricer to mash each potato into the pan (no need to peel, and the skins on their own make a tasty snack, especially covered in melted cheese).
- Mix well and serve.
