These are a great way to use up some leftover lentils.
Ingredients
- 250g leftover cooked lentils and rice (50/50 mixture)
- 1 egg
- 60g self raising flour
- 2 tbsp (30ml) water
- 1 tbsp sunflower oil
Method
- Mix the lentils, rice, egg, flour and water together until combined.
- Heat the oil in a frying pan over a medium-high heat.
- Once the oil is hot, split the lentil mixture into 4 spoonfuls and press down in the frying pan to form patties.
- Cook on each side until golden (probably about 4 minutes).
- Remove from the pan and place on a sheet of kitchen paper to absorb any spare oil.
- Serve while still hot with a flavoured mayonnaise (e.g. 4 tbsp mayonnaise, 1 tsp curry powder and 1 tsp harissa mixed together).
