Lentil and Rice Fritters

These are a great way to use up some leftover lentils.

Ingredients

  • 250g leftover cooked lentils and rice (50/50 mixture)
  • 1 egg
  • 60g self raising flour
  • 2 tbsp (30ml) water
  • 1 tbsp sunflower oil

Method

  1. Mix the lentils, rice, egg, flour and water together until combined.
  2. Heat the oil in a frying pan over a medium-high heat.
  3. Once the oil is hot, split the lentil mixture into 4 spoonfuls and press down in the frying pan to form patties.
  4. Cook on each side until golden (probably about 4 minutes).
  5. Remove from the pan and place on a sheet of kitchen paper to absorb any spare oil.
  6. Serve while still hot with a flavoured mayonnaise (e.g. 4 tbsp mayonnaise, 1 tsp curry powder and 1 tsp harissa mixed together).
Makes 4 fritters, enough for 2 servings.
