Crispy Onion Covered Chicken

Inspired by a 3 ingredient chicken recipe this is a quick and simple way to make chicken breasts a bit more exciting.

Ingredients

  • 100g pre-fried onion pieces
  • 2 chicken breasts
  • 2 tbsp mayonnaise

Method

  1. Pre-heat the air fryer to 180 degrees.
  2. Put the onion pieces in a plastic bag, seal and roll with a rolling pin until it's finely crushed (or use a blender but be careful not to go too far and make onion powder).
  3. Pour the crushed onion pieces into a bowl, get the mayonnaise out and ready and now it's time to get a bit messy.
  4. Use a rolling pin or meat mallet to bash each chicken breast into a flatter more event shape.
  5. Put a table spoon of mayonnaise on each chicken breast and use one hand to carefully smear the mayonnaise all over the chicken breast.
  6. Dump it into the crushed onions and flip over and use your other (dry) hand to make sure it's well coated.
  7. Repeat with the remaining chicken breast.
  8. Place in the air fryer and cook for about 16 minutes (or until a thermometer reads 74 degrees Celsius) turning after about 7 or 8 minutes.
  9. Serve with pasta and green vegetables like broccoli or a crisp salad.
