Ingredients
- 1 batch of easy slow fermented pizza dough - 420g flour
- 3 rashers of bacon, cut into bit sized pieces
- 1 tbsp olive oil
- 1 carrot, peeled and cut into 5mm squares
- 4 floret of broccoli, very finely chopped
- 4 tbsp peas
- 1 clove of garlic, crushed
- 400g passata
- 2 tbsp tomato puree
- 250g grated mozzarella
Method
- Pre-heat the oven to 190 degrees Celsius.
- Put a large frying pan over a medium heat and add the olive oil and bacon and cook until starting to brown, stiring frequently.
- While that cooks, put the carrot, broccoli and peas in a microwave proof dish with lid and a couple of tablespoons of water and microwave on full power for 2 minutes.
- When the bacon is ready, throw the crushed garlic into the frying pan and cook for a minute.
- Add the passata and tomato puree to the frying pan and mix well.
- Drain the microwaved vegetables and add them to the pan and stir in to the bacon and tomato sauce.
- Turn the heat off under the tomato sauce.
- Divide the dough into three quarters and a quarter.
- Roll out the three quarters to about 18 inches.
- Lightly oil a 23cm springform cake tin and then line with the rolled out dough.
- Put half the tomato sauce into the tin and then sprinkle half the cheese on top.
- Roll out the other quarter of dough into the right size to put into the tin and place over the cheese.
- Put the remaining tomato sauce on top of the disc of dough and finally top with the remaining grated cheese.
- Fold the edges over onto the cheese - don't worry there will be a bit of uncovered cheese in the middle.
- Place on a baking tray and bake for 45 minutes by which time the dough should be golden and crisp and the cheese wonderfully melted.
- Undo the clip on the springform tin, but don't try to take the pizza pie out immediately.
- Leave to cool for 10 minutes before removing, slicing into wedges and serving.
