This is a simple pressure cooker dhal that gives a rich dish which is high in fibre and protein.
Ingredients
- 1 red onion, peeled and finely chopped
- 1 garlic clove, peeled and cut in half
- a thumb sized piece of ginger, peeled and cut in half
- 0.5 tsp turmeric
- 0.5 tsp ground cumin
- 0.5 tsp ground coriander
- 2 tbsp sunflower oil, separated
- 500ml low-sodium chicken stock
- 150g dry red lentils
- 1 large carrot, peeled and coarsely grated
- 50g dried coconut milk powder
Method
- Put the onion, garlic, ginger, spices and 1 tbsp of sunflower oil in a blender/spice grinder and blend on high until a smooth paste.
- Put the remaining 1 tbsp sunflower oil in the pressure cooker and set the saute mode.
- Once the pressure cooker is up to temperature, add the spice and onion paste to it and fry for a couple of minutes, stiring frequently.
- Add about a fifth of the stock and use it to deglaze the crust from the pan.
- Add the remaining stock, lentils and carrot and mix well.
- Set on high-pressure for 4 minutes and cook, letting it release naturally.
- Once the lentils are done, remove a bit of liquid from the dish and mix into thte dried coconut milk powder until it forms a smooth slurry.
- Stir the coconut through the lentils and serve.
