Scone Pizza

No photos for this one - I messed up and forgot to add yeast to an overnight dough so had to quickly make a scone dough for dinner, so no time for pictures!

Ingredients

  • 440g self raising flour
  • 100g butter at room temperature
  • 220ml milk
  • 6 tbsp (90ml) pizza sauce or passata
  • 250g grated mozzarella

Method

  1. Pre-heat the oven to 200 degrees Celsius.
  2. Add the flour and butter into a large mixing bowl and rub together with your fingertips until well combined and resembling fine breadcrumbs.
  3. Add the milk to the flour and butter and mix with a knife until it starts to come together.
  4. Use your hands to kneed into a dough at the end and then split into two balls.
  5. Roll out one of the balls into a 12 inch circle using a rolling pin and a well floured surface and transfer to a baking tray.
  6. Repeat with the remaining ball.
  7. Divide the pizza sauce/passata between the two dough circles and spread evenly over them.
  8. Top each pizza with half the cheese.
  9. Bake in the oven for 15 to 20 minutes until the cheese is well melted and starting to crisp up.
  10. Serve immediately with a crisp salad.
