This is a healthier and better for the environemnt alternative to beef meat balls. Just cook in the oven and then plonk into a tomato sauce to go with pasta.
Ingredients
- 500g of 6% chicken (or turkey) mince
- 60g breadcrumbs (preferably panko or homemade)
- 50g finely grated grana padana cheese
- 1 egg
- 2 tbsp olive oil
- salt and pepper to taste
Method
- Preheat the oven to 200 degrees Celsius.
- Mix all the ingredients in a large mixing bowl - you can either use a spoon for this or just use your hands.
- Shape the mixture into small meatballs (about two thirds of a heaped tablespoon) using your hands and place on a baking sheet. You'll probably get about 28 to 30 meatballs from the ingredients.
- Bake for 25 to 30 minutes, until golden brown on the outside.
- Serve with a simple tomato sauce and freshly cooked pasta.
