This is a simple tahini based sauce that pairs well with grilled meats, kebabs and oven roasted feta.
Serves 4.
Ingredients
- 4 tbsp ligh tahini
- 2 tbsp lemon juice
- 2 cloves garlic, crushed in a garlic crusher
- 1/2 tsp sumac
- a pinch of salt
- 5 to 6 tbsp warm water
Method
- Put all the ingredients other than the warm water into a bowl and carefully mush together with a whisk.
- Adding a tbsp of water at a time, whisk the water into the sauce.
- When the sauce has a texture of a slightly runny peanut butter, stop adding warm water and place in the fridge for at least 30 minutes to chill.
- Serve as an accompaniment to grilled meats or fishes and flatbreads.
